There is so many ways to enjoy Zucchini.  I created a recipe that we really enjoy on the grill.

I always seem to have mushrooms in the refrigerator and as you know they do not keep long.  I kept running into the problem of having to throw half of the carton away, so I created this recipe.

For this recipe I used the following ingredients

Large zucchini

1 carton of mushrooms

1 half of a small onion, or to your liking

Salt and pepper

Garlic

Happy Cow pepper-jack cheese

Parmesan cheese

Butter

For one large zucchini, I use half a carton of mushrooms chopped small.

Cut zucchini in half as shown above.  I use my Pampered Chef chopper to chop onions, mushrooms and insides from the zucchini.  I buy my garlic already chopped.  Add as much garlic as you like, I used 1/2 teaspoon for this recipe.  Hull out the inside of zucchini and chop, then add to the mushrooms and onion and garlic.  Salt and pepper to taste.  I use 1 teapsoon of Parmesan cheese and two slices or portions of the Happy cow pepper-jack cheese.

Mix all ingredients in a pan, add a teaspoon of butter and cook down until its consistency is thick and not runny. Basically cooking the water out of the zucchini and mushrooms. 

Fill hulled out zucchini with this mixture and top with pepper jack cheese, or mozzarella or provolone cheese.

You can grill these or bake them in the oven until zucchini is cooked. approximatly 20 mins in oven at 350.

In the top picture, I added tomato’s to some of the batch that I made.

You can also use spaghetti sauce with hamburger in place of the mushroom mixture, to change up the meal.
